Broccoli Amandine:
from Old-Fashioned Vegetable Garden Recipes
1 lb. broccoli 1 tsp. Dijon mustard
1/3 cup olive oil 1/4 cup toasted slivered almonds
1/4 cup tarragon vinegar
Cut broccoli into bite size pieces; cook in boiling, salted water 6 to 8 minutes, until tender, and drain. Meanwhile, toast almonds in a small skillet over medium heat. Combine oil, vinegar and mustard. Place broccoli in serving bowl and toss lightly with dressing and almonds. Serve hot.
Apple Butter:
from Old-Fashioned Celebrations Recipes
Pare, core and slice your apples and cook with a little water until a good sauce. In a large kettle, compine 8 cups of applesauce with 5 cups of brown sugar and 1 cup of apple cider. Add 1/2 teaspoon of ground cloves, 1/2 teaspoon nutmeg and 1 teaspoon cinnamon. Cook without covering until thick and clear.
Valentine Buns:
from Old-Fashioned Celebrations Recipes
2 cups flour 1/2 cup lemon rind, grated
3 tbs. shortening 1 egg, well beaten
3 tsp. baking powder 1/2 cup seedless raisins
1/2 tsp. salt milk
1/4 cup sugar 1 tbs. sugar & cream
Sift flour; measure and sift with baking powder and salt. Cut in shortening. Add sugar, grated lemon rind, egg (reserve a little egg to brush on top of buns), raisins and enough milk to make a soft dough that can be molded. Pat into a sheet 1 inch thick and cut into rounds, or mold into 12 round buns. Place on greased baking sheet. Brush tops with reserved egg. Bake 450 degrees F. 12-15 minutes. Brush top with 1 tbs sugar moistened with a little cream. Serve hot.
Pumpkin Bread:
from Old-Fashioned Pumpkin Recipes
2 cups flour 1/2 cup vegetable oil
1 tsp. baking soda 2 eggs, beaten
1 tsp. salt 1 cup cooked pumpkin
1 tsp. pumpkin pie spice 1/4 cup water
1 1/2 cups sugar
Sift dry ingredients together. Blend sugar, oil, eggs, pumpkin and water and add to flour mixture. Beat well. Pour into greased, floured 9x5 inch loaf pan and bake in 350 degrees F. oven 1 hour and 10 minutes.
